EXECUTIVE CHEF BETH ROSS

For Executive Chef Beth Ross, a life in the kitchen wasn’t so much a decision as it was a natural unfolding. Growing up in Abbotsford, British Columbia, Beth discovered her love for food early, first through baking cookies before she was even allowed to cook. That spark continued overseas, where she prepared daily meals for the family she nannied for in the UK. Upon returning home, she stepped into her first professional kitchen in Abbotsford at an entry-level position — and from there, she never looked back.

Determined to grow in her craft, Beth went on to study Culinary Arts at Vancouver Community College, later earning her Red Seal certification in 2010. Now celebrating her twentieth year in the industry, she brings both experience and heart to her role as Dual Executive Chef at Carmen’s Event Centre and C Hotel by Carmen’s.

Beth believes in cooking that is bold, thoughtful, and seasonal, letting great ingredients guide her creativity. Among all ingredients, she champions the humble egg, endlessly versatile and, in her words, “simply delicious.” She is exacting in her technique, rarely found without her mini offset spatula, long tongs, or Japanese mandolin close at hand.

While she has created countless memorable dishes, Beth’s greatest pride comes from the success of others. Mentoring young chefs and watching them grow into confident, skilled professionals is, for her, the most rewarding part of the job. She finds inspiration everywhere — from influential chefs like Marco Pierre White to the colours that shape her plating — and she encourages up-and-coming cooks to invest in their foundations, stay curious, and be brave enough to try something new.

Outside the kitchen, Beth is happiest surrounded by her four fur-babies. She enjoys baking at home, quilting, knitting, and crocheting; creative outlets that mirror the patience and craftsmanship she brings to her culinary work. A fan of local dining when time allows, she gravitates toward spots like The Mule and Bardo on Locke Street, and unwinds with a good cider, a Moscow Mule, or a glass of wine.

Though confident and composed in the kitchen, Beth shares a surprising truth: she’s actually quite shy. Yet her warmth, passion, and dedication shine through every dish she creates. For Beth, hospitality is simple, it’s about genuine care, honest food, and the desire to make every guest feel welcome.
